How to make Juicy Grilled Chicken Breasts for 2

Grilled chicken breasts recipe is versatile and so easy. I know one of my friend like it most. So, I put it in my menu and pair well with marinades. Let’s get started!

Ingredients:
- 2 Skinless, boneless chicken breasts (fresh and uniform in size)
- 4 tablespoons olive oil
- 3 tablespoons lemon juice
- Salt (to taste)
- black pepper (to taste)
- 1 teaspoon onion powder
- 2 teaspoons dried oregano or parsley
- A pinch of red chili flakes for a slight kick(optional)
Directions
Step 1
Take the chicken breasts and pat them dry with paper towels. If the breasts are uneven in thickness, place them between plastic wrap and gently pound with a rolling pin until they are of uniform thickness. Gather all the other ingredients.
Step 2
Now, make the marinade. Add lemon juice, onion powder, dried parsley or oregano, black pepper, chili flaxes and salt in a large bowl. Place the chicken breasts in a resealable plastic bag. Pour the marinade over the chicken, ensuring each piece is well-coated. Seal the bag and refrigerate for at least 30 minutes.

Step 3
Preheat your grill to medium-high and lightly oil the grates to prevent sticking.
Step 4

Thai Shrimp Salad
When grilling for two, your menu should strike a balance between simplicity and variety. So, I decided to make Thai Shrimp Salad. This salad is lean source of protein. It is a perfect and refreshing dish. It combines succulent grilled shrimp with crunchy vegetables, sweet, and spicy dressing. Let’s get started!
Ingredients
- 1 teaspoons sesame seeds, toasted
- 2 tablespoons lime juice
- 1-1/2 teaspoons minced fresh mint
- 12 medium shrimp (peeled and deveined)
- 1 tablespoon sesame oil
- 2 cups torn leaf lettuce
- 1 tablespoon reduced-sodium soy sauce
- 1/8 teaspoon pepper
- 2 tablespoons fresh cilantro (chopped)
- 1/4 cup red bell pepper (thinly sliced)
- salt to taste
- 1 large sweet onion, sliced
- 1/2 cup cucumber (thinly sliced)
Directions
Step 1: Marinate the Shrimp and Prepare the Salad
In a large bowl, mix sesame oil, lime juice, soy sauce, sesame seeds, fresh cilantro and minced mint. Sprinkle shrimp with salt and pepper; thread onto 2 metal or soaked wooden skewers. Let it marinate for 10-15 minutes.
Step 2: Grill the Shrimp

Preheat a grill or grill pan to medium heat. Grill the shrimp for 2-4 minutes per side until they turn pink. Remove from heat and set aside.
Step 3: Make the Dressing
Stir the dressing; add the shrimp, onion and cucumber. Toss to coat.
Step 4: Assemble the Salad
Toss the salad with the dressing until evenly coated. Divide into two salad plates and serve .
